I think Flavius guided Bayek's hand more than just dodging. He looks back first then turns while holding Bayek's knife arm. The cutscene doesn't really give a good look, though.

Origins is not grindy. Just do side quests and you’ll be fine. Odyssey, on the other hand, has you repeating arena battles over and over to try and level up, and don’t get me started on running around clearing forts hoping and praying to get the one piece of gear that finishes your build. 1. Shield charge your enemies that have shields/are blocking your attacks so you can stun them and get a few blows in with swords. Try to save your arrows for Flavius though. Keep your distance, use your bow to get him to appear and then use a sword a few times before dodging away.
